Foods may be classified in relation to the metabolic process as acid and alkaline. Alkalis are soluble salts and acids are corrosive agents which have trouble combining with other things.

All vegetable and fruit juices are highly alkaline. The most alkaline-forming juices are: fig juice, green juices of all green vegetables and tops, carrot, beet, celery, pineapple and lemon juice. Vegetable broth is an extremely alkalizing drink.

A Healing and healthful meal should consist of 35% acid and 65% alkaline, in order to have optimum health. A chronically over-acidic body pH corrodes body tissue, slowly eating into the 60,000 miles of our veins and arteries like acid eating into marble.

The pH of your tissues reflects your state of balance or imbalance, or inner cleanliness or filth. The closer the pH is ideal, the higher is your level of well-being.

Highly Alkaline

String Beans, Banana Speckled, Dandelion Greens, Dates, Figs, Prune, Raisins, Swiss Chard.

High Alkaline

Almonds, Asparagus, Avocado, Banana-Yellow, Beet, Blackberry, Chives, Cranberries, Endive, Sour Grapes, Kale, Peach, Persimmon, Pomegranate, Plum, Raspberries, Spinach.

Alkaline

Agar, Alfalfa, Apple, Apricot fresh, Artichokes, Bamboo Shoots, Bean Snaps, Bean Sprouts, Most Berries, Blueberries, Broccoli, Brussels Sprouts, Cabbage, Cantaloupe, Cauliflower, Celery, Cherries, Chestnuts, Chicory, Coconut Milk, Collards, Fresh Corn, Cucumbers, Daikon, Eggplant, Escarole, Garlic, Ginger Root, Gooseberry, Grapefruit, Guava, Kelp, Kohlrabi, Leek, Lemon and peel, Lettuce, Lime, Mango, Melons.

Neutral Oils

Highly Acid

Alcohol, Barley Grain, Bread, Buckwheat Grain, Caffeine, Coffee, Dry Corn Products, Custard, Drugs, All Flour, Oatmeal, All rice, Millet, , Peanuts, Wheat Grain, Soy Noodles, Pasta, Sugar, Tobacco, English Walnuts.

Acid

Dried Beans, Cashews, Juice Concentrates, Dry Peas, Pasteurized Milk Products, Egg Yolk, Fruit Jellies and Jams.

Acid Fats

Butter, Cream Margarine, Lard.
